In a previous post I said I was living in Transylvania. And, like all the places I visit, I like to try local cuisine. So, during my first days in Cluj-Napoca (one of the cities in Transylvania, Romania) I went to a local restaurant called Bricks with a colleague that I met at the elevator (“descendator” because it was going down 😀 ) at the hotel. Now is one of my very good friends, but that will be another story.
Ciorba de burta means tripe soup. Although the difference between ciorba and supa is not very clear to me (2 different names in Romanian language to designate a soup!!), this will be the best translation. And now, what kind of sorcery is this?? What is special about this soup?

Well, first of all, I don’t know if it is common for everyone to eat tripe! And second, is a soup with a lot of garlic, vinegar (vampires can’t eat it 🙂 ) and depending where is served, with sour cream; and of course bread is never missing. The pieces of tripe in this soup are very tender, not like the Spanish (ex:callos a la madrilena) and Costa Rican (ex: sopa de mondongo) “versions”.

It’s hard to describe the taste of this dish, that have many versions in the rest of Eastern Europe; but if you are not afraid to experiment with food, it is a good choice and a must if you visit Romania.

For a good ciorba de burta in Cluj I suggest you visit Bricks or Hanul Dacilor.
